Pillsbury "Just unroll it, don't play with it, I said don't play with it" pie crust
Six 12 cups baby spinach
2 tbsp butter
salt and pepper
2/3 cup heavy cream
3 egg yolks (This will require 5 eggs and a generous helping of patience)
4 1/2 oz. feta cheese
1/3 cup pine nuts
Directions:
Cut pie crust and fit into 4 or 5 mini tart shells. Bake for 10 minutes at 400 degrees.
Return to grocery store for more spinach because son has fed the entire bag to rabbit.
Blanch 6 cups of spinach in boiling water for one minute, then drain and squeeze water out.
Chop spinach. Melt butter in a skillet, add spinach and cook gently to evaporate any remaining liquid. Season with salt and pepper. Stir in the cream and egg yolks. Crumble feta and divide between the tarts. Pour creamed spinach mixture on top and bake for 10 minutes. Top with pine nuts and bake for additional 5 minutes.
Serve immediately to undeserving family.
